The Folukie Caribbean influence is derived primarily from Trinidad, where family members live. The Trinidadian "Trini" heritage is a diverse blend of cultures the world over: East Indian, Spanish, Portuguese, African, Creole (African and French), Chinese, Syrian and Lebanese.

Naturally, the food is rich with spice, complex flavors and heavenly aromas!

A signature dish of Trinidad, and its sister island of Tobago, is a unique dish called 'callaloo.' This is a savory mix of okra, crab, thyme, coconut milk, dasheen leaves and French thistle (shado beni), or culantro. The result is a side dish that is both creamy and spicy, and is often enjoyed at lunch along with cornmeal coo coo.
Other classic favorites include a rice-based dish called 'Pelau,' and
'Roti,' a stuffed flatbread filled with meat, curried potatoes and chick peas (channa). Stewed (caramelized) chicken is always on the menu at Folukie, thankfully so.
Even more cultural diversity is brought to the Folukie table with the West African side of the family, who hail from Ghana.
There, the preference is generally hot and spicy, with plenty of chilis and peppers.
Historically, the people from this land traded spices with Arabia (such as mint, cinnamon and clove). Later on, the Portuguese, French and British influenced in their regional cooking as well. 
Traditional customs are kept very much alive through recipes and preparation methods.
Favorite ingredients include meat, fish, seafood, chicken, eggs, rice, peanuts, black-eyed peas, root vegetables, okra, plantains, peppers, green peas, citrus fruits, and pineapples, the international symbol for hospitality.
