The Folukie Carribean influence comes from family in Trinidad. Historically, the "Trini" heritage is a diverse blend of world cultures from Eastern India, Spain, Portugal, Africa, China, Syria and Lebanon and Creole (African and French). The food is rich with spices, complex flavors and heavenly aromas!
A signature dish of Trinidad, and its sister island of Tobago, is callaloo. This savory mix of okra, crab, thyme, coconut milk, dasheen leaves and French thistle (shado beni), or culantro results in a side dish that is both creamy and spicy, often enjoyed at lunch along with cornmeal coo coo. Other classics include Pelau (a rice-based dish), Roti (a stuffed flatbread filled with meat, curried potatoes and chick peas or channa), and caramelized 'stew chicken'.

The Folukie West African influence comes from family in Ghana, adding even more cultural diversity. Historically, Ghanians traded mint, cinnamon, clove and other spices with Arabia, and their regional cooking was later influenced by Portugal, France and Britain.
Specialties are made with hot and spicy flavoring, using plenty of chilis and peppers along with favorite ingredients. Meat, fish, seafood, chicken, eggs, rice, peanuts, black-eyed peas, root vegetables, okra, plantains, peppers, green peas, citrus fruits, and pineapples, are classic items found on the Folukie menu, prepared using time-honored recipes and traditional preparation methods.
The ginger-passionfruit drink is West African, popularly made in Senegal, and a good example of how sweet fruit is given a spicy kick that tastebuds are sure to enjoy!
